It’s area is impressive, today it is possible to place up to 500 thousand bottles of wine for maturity at the same time.
We can speak endless about wine but it is impossible to tell about all its grades, amazing taste qualities and original virtues. Enoteca is a real treasure-house of every vine-making enterprise, where not only the sparkle of its production — the collection wines are kept but also there is the history of the vine making of native land and masters-skilled craftsmen, whose hands created all these masterpieces.

In accordance with present classification of wines, collection wines are fine wines which after maturity in an oak casks are additionally aged in bottles no less than three years. In time of maturity the valuable bottle taste and bouquet are developing in wine. Deep power of earth, life-giving energy of a sun and a secret of ancient superstitions, united in these drinks in unbelievable way.

The enoteca of Koktebel had its history since 1970. Small pre-revolution basement which with the lapse of time grew into deserving admirations enoteca served as an apartment for storage of wines that times. Inside small niches were constructed where were put the first samples of contestant wines: Madeira Koktebel vintage 1964, Muscatel Koktebel vintage 1967 and brandy Koktebel from the alcohols of 1961 vintage. On the Second International competition of wines and brandies in 1970 in Yalta they were awarded gold medals.

Creation of elite wine was always like an art. It is a very difficult and creative process, because wine with high taste features is made only from a high-quality, well matured vine. For this reason only the best productive years wines are traditionally put into enoteca. Today its fund numbers 150 thousand bottles of wine. These are wines-rarities of the last best harvest 30 years: Madeira Koktebel of harvest of 1964, Muscatel of Koktebel of harvest 1972 and 1975 years, Crimean white port wine 1962, Old nectar of 1989, The Talisman of 1979 and  Aligote Koktebel harvest of 1981.              

In enoteca bottles are kept in the special niches called kazakhs, where they are laid out in a horizontal position. It is one of the obligatory requirements, because this way wine adjoins a cork stopper. As a result it does not dry up and continues firmly cork up the bottle. The second no less important condition is a permanent support of necessary temperature for wines  +12°— +16°C.

Enormous role in maturity is also played by humidity of air in the enoteca. That is why mould, covering bottles and walls, is not cleaned away here. Collecting and retaining moisture, fungus creates a necessary microclimate for the wines. But enoteca is not only a wine storage. It has three major functions: publicity-research, museum and commercial.

With the building of new winery and increase of assortment of high-quality fine wines appeared a requirement in creation of another collection cellar. Therefore a project of new enoteca for 500 thousands of bottles was developed. His building is in progress now, and with the lapse of time noble wines will grow here into unique drinks giving gladness and pleasure, reserving the admirers the indelible impressions and unforgettable aftertaste.

On the decision of Ministry of agricultural policy of Ukraine the unique enoteca (depository of wines) of Fine wines and brandies of Koktebel distillery is acknowledged as a national property, presenting a considerable scientific, historical and practical value.
