More than 30 sorts of vine (among them Muscatel, Traminer, Saperavi and Shabash) are grown in Koktebel and give the richest source of raw materials to the winery 

Wonderful location and enormous territory (about 16 hectares) favour the wine making and allow to store 1 500 decalitres of wine. The basic workshop where wine matures is situated in a hill and consists of numerous tunnels, located on different levels. Here wines mature in enormous rubbles and wooden casks. The temperate climate and warm Koktebel summers make it possible for different sorts of grapes to ripen, from which in the course of time unique wines will be made. Step by step they pass all of the stages on the way to the transformation into a priceless ruby set in the frame of long years.

In a lower cellar there are two- or three- year old dessert wines, and also strong white and red port wines of no less 3 years old. In overhead cellar there are dry wines not younger than 1,5-2 years old and strong wine Portwine white Koktebel that is not younger 3 years old. The pearl of Koktebel vine making is the greatest in Europe Madeira ground that gives birth to the famous Koktebel Madeira Wine peculiar for its red-hot nut flavour. Due to the plenty of sun, this locality is traditionally famous for the dessert sorts of grapes which are sweet, fragrant and saturated with the energy of the southern sun.

One of the major tasks of a wine-maker is to save the naturalness of wine. Wine as a genuine live drink, must contain no additions. For this reason the joint-stock Koktebel distillery makes a point of adhering to all technologies of its production. One important stage here is laboratory control of all technological processes of production. There are a few stages of wine quality control: sampling, microscoping, determining the amount of microorganisms and the physiological state of cells. The specialists control grapes, it’s mature, the must after the precipitation, the process of fermentation, wine materials that are sent to storage, and wine, prepared for bottling. Each stage is supervised by specialists.

Observing strict quality control rules gives certainty about Koktebel wines and brandies will satisfy their true connoisseurs. So that the drink could be kept longer saving its unique properties, the cork stoppers made from Portuguese oak are used only.
